This simple side salad is a refreshing alternative to slaw.
2 Cups grated carrots
1/2 Tbsp. olive oil
1 1/2 Tbsp. cider/herb or wine vinegar
2 Tbsp. chopped parsley or chervil
3 or 4 Tbsp. chopped fresh chives
Mix together ahead of time and refrigerate to allow flavors to mingle
