Grilled Tomato Salad
2 large ripe tomatoes (beefsteak size)
1 extra-large sweet onion
2 – 3 teaspoons balsamic vinegar
1 Tablespoon chopped fresh thyme.
Salt
Pepper
Olive oil
Slice tomatoes and onions into ½” thick slices. Brush with olive oil on both sides and sprinkle with salt and pepper. Grill about 3 minutes on each side. Chop coarsely and add balsamic vinegar and thyme. Wow!
